Hello peoples, beef stirfry with lots of vegs plus rice cooking up here, but also have a pot of veggie trimmings and chook bones to go onto the stove for the evening to make soup stock. There's pumpkin peels, parsnip peels and apple peels in it. All flavoursome and vitamin loaded, but a bit chewy for the dishes I was using the insides in. 🙂 The apple peels might sound a bit odd for soup, but in the right proportions they add a nice sweet tang.
