Hey @greenpea it's super easy - the recipe is on the label of Golden Circle baby beetroot can.  Frozen puff pastry, caremelised red onion, chopped beets, crumbled feta (or goat's cheese if you can afford it), crushed walnuts and bake 20 min or so.  Everyone loves it whenever I make it.
