Lol @Zoe7 ..... now you understand why I was jumping up and down to get the crepe pan here this week ..... or at least find somewhere that sells them .... cos I only have this week to have cream with them, and from next week I will have to go lookin for a fasting verson (vegan) crepe batter. Might have to ask on the Munchies thread ..... we have vegans here who might help me out.

Don’t worry, I will make yours the “orthodox” way .... lol .... as in the way you know .....

Dairy-Free Crepes
 

Ingredients

  • 1 cup flour
  • 1-1/4 cup water
  • 2 eggs
  • 1 teaspoon sugar
  • pinch of salt
  • 1-1/4 tablespoons olive oil, divided

Directions

  1. In a bowl, mix the flour, water, eggs, sugar, salt, and 1 tablespoon of olive oil until smooth. Refrigerate for 30 minutes.
  2. After 30 minutes, wet a crepe skillet or saucepan with the remaining olive oil. Distribute it evenly and get rid of excess with a kitchen paper towel.
  3. Over low - medium heat, in a crepe skillet, pour a portion of the crepe batter then tilt the skillet continuously to swirl it around batter evenly. Flip to cook the other side when it is cooked through.

I lose eggs next week too @Zoe7 ..... the fast gets harder .....

There will be a vegan recipe with no eggs and no dairy, I’m sure .....

I did wonder about the eggs @Faith-and-Hope - and knew the olive oil would only be for weekends - I shall search again.......

I will look forward to having them with eggs and cream again in the week after Easter.

Is margarine allowed - it isn't really dairy lol @Faith-and-Hope

Here's another one:

INGREDIENTS
  
DIRECTIONS
  1. Sift flour, sugar, baking powder, and salt together into medium mixing bowl.
  2. Melt 2 1/2 Tbsp margarine in frying pan until melted.
  3. Be sure to tip the pan side to side to coat/grease all over.
  4. Pour melted margarine in a small bowl, add water and egg (if you want to add egg); Mix well.
  5. Stir liquid mixture into the dry ingredients until it is thoroughly moistened.
  6. It is OK if this batter is lumpy.
  7. Cook the pancakes over medium-high heat on the stove-top (or 375F on electric frying pans).
  8. Cook pancakes until the tops are bubbly and the bottoms browned.
  9. Turn the pancakes over to cook other side (approximately four minutes per side).
